Green Bean Casserole is a classic, but it’s so much better when you make it from scratch. This recipe is quick, easy, and delicious, and best of all, it requires no processed foods.
Why make green bean casserole from scratch when the regular way is so easy? Because this version is tastier, tastier, and only about 10 minutes of work, and you can say you made it all yourself. It’s healthier while still scratching that nostalgic itch. It has the combined umami powers of caramelized onions, double mushrooms, soy sauce, fish sauce and parmesan cheese. It’s so good you won’t want to stop for the turkey or anything else.
How to make a green bean casserole
Green Bean Casserole is very easy to make. Regardless of the version or recipe, the process is the same:
- Prepare your mushroom soupadd fried onions and soy sauce.
- Blanche your fresh green beans.
- Gather and bake until browned and browned.
- ball with fried onions and cook a little longer until the onions are warmed and crispy.

An Improved Healthier Green Bean Casserole
Every ingredient of the classic dish has been improved:
- Mushroom soup with scratch: we make our own, even more mushrooms.
- Soy sauce with mushrooms: I recommend 1-2 handfuls of dark mushroom soy sauce + fish sauce.
- Farm Fresh Green Beans: switch for farm fresh green beans blanched very briefly.
- French Fried Onions: Actually you can’t improve this.
Soy sauce with dark mushrooms
Believe it or not, soy sauce was an integral part of this recipe right when it was invented in the 50s. If you’re buying a fresh bottle, check out the dark mushroom soy sauce for extra mushroom flavor. It goes great with anything you want to use soy sauce for. However you don’t need it, feel free to use any old soy sauce.
Fried onions
Although everything else in this recipe is made from scratch, you don’t have to make homemade just for homemade’s sake. Unless you own tens of thousands of dollars worth of commercial dehydrating and deep frying equipment, you likely can’t match the quality of commercial fried onions.
Unless you live in a country that sells fried onions, almost all Asian supermarkets sell fried onions or scallions. In my opinion, believe it or not IKEA sells the best fried onions. And of course, Amazon.
How long to cook green bean casserole
The bean casserole is fully cooked before going into the oven. The reason it’s cooked at all is to bring all the flavors together and to caramelize the mushrooms and onions in the soup. This can be done in less than 15 minutes.
Make a green bean casserole ahead of time
If you want zero stress and are making it within 24 hours, you can put the whole casserole together the night before, cover and refrigerate. When ready to cook, add 10-20 minutes of cooking time. If you’re making breakfast in advance, it’s best to trim the green beans and make the mushroom stock, but don’t blanch the beans until you’re ready to harvest them.

Green Bean Casserole Recipe
A super fresh mushroom update on the classic green bean casserole
It serves 4
- 4 tablespoon butter or olive oil, or a mixture of both
- 4 carnation garlic crushed
- 1/2 medium onion slices
- 1 £ mushrooms Pre-cut cream is preferred
- 4-8 bough thyme or other herbs
- 2 tablespoon all purpose flour
- 3/4 CUP white wine or beef/chicken/vegetable stock
- 1 CUP heavy cream
- 0.5-1 CUP milk optional, see notes
- 1 tablespoon soy sauce with dark mushrooms or regular soy sauce
- 1 SPOON fish sauce optionally
- 1/2 CUP french fried onions
ASSEMBLY
- 1.5 £ legumes ends shortened
- 1/2 CUP Parmigiano Reggiano cheese or Cheddar
- 1 CUP french fried onions or more, to complete

Melt the butter over medium heat, being careful not to burn it. Sauté the onions for 2-3 minutes, then add the garlic and cook for about 1 minute. Add mushrooms and thyme. Cook, stirring occasionally, until mushrooms are browned, about 7 minutes. Add the flour, salt and pepper and mix for another 2 minutes until the flour is fully incorporated.

Add the wine and reduce by half, about 3 minutes. Reduce the heat to low, then add the cream, soy sauce, fish sauce, milk (if using) and fried onions. Stir, adjust and boil for 10-15 minutes.

While you wait for your sauce to thicken, blanch the green beans in boiling salted water for 3 minutes, then drain and cool. If you like your green beans on the crunchy side, use an ice bath. Also preheat your oven to 375ºF.

To assemble: make a bed of green beans in a large ovenproof dish. Pour over the mushroom sauce and top with Parmesan. Bake for 30 minutes at 375ºF.

Remove from the oven, carefully toss some green beans and then toss in more onion. Return to the oven for another 5 minutes or until the onions are crispy.
Add milk if you prefer your pan on the thicker side, leave it out if you prefer your pan thicker. Pictured without added milk.
